Brassica oleracea L grupo Acephala – Couve-galega
A Couve-galega é um vegetal crucífero pertencente ao grupo Acephala, da espécie Brassica oleracea. As suas características antioxidantes, antimicrobianas e anticancerígenas(14) têm sido relevantes na prevenção e no tratamento de diversas doenças crónicas. Os seus efeitos benéficos parecem dever-se à presença de fitonutrientes que incluem o grupo dos glucosinolatos, compostos fenólicos, carotenoides e terpenóides(13).
Do grupo dos glucosinolatos destaca-se o indole-3-carbinol como agente quimio-protetor, a sinigrina, a glucobrassicina e a glucorafarina que contribuem para a redução do risco da carcinogénese, diabetes, asterosclerose e de doenças neurodegenerativas, respiratórias, cardiovasculares e oculares. Dos compostos fenólicos sobressaem-se os flavonóides como a quercetina e o kaempferol, as antocianinas como o cianidlicosídeo, os ácidos benzóico, cinâmico, caféico e ferúlico. Dos carotenóides, o β-caroteno é importante para uma pele saudável e para os sistemas ósseo, gastrointestinal e respiratório, a luteína, o licopeno, o α-tocoferol e a zeaxantina para a manutenção das membranas celulares e prevenção dos danos oxidativos causados nos tecidos oculares(13).
Nos últimos anos tem ganho popularidade como superalimento pela sua composição nutricional rica em clorofila, β-caroteno, flavonóides, glucorafarina, ácidos gordos, proteína, hidratos de carbono e fibra dietética. É fonte de vitaminas e minerais como as vitaminas A, C, E, K e as vitaminas do complexo B e, potássio, magnésio, ferro, cobre, folato e cálcio de elevada biodisponiblidade(13,14).
